Slow Cooker Beef Stew Recipe



This recipe is a hit in my house with the kids, and it's the perfect thing to serve a double portion of on co-op nights, when I sometimes bring home double the kids I arrived at co-op with. Fantastic for summer, whether you are on the go or just trying to chill out all day by the pool. Even better for winter, when you're looking for the perfect meat-and-potatoes comfort meal!

1.5 pounds of beef stew meat, cut into small pieces
4 large potatoes, skin on and cut into small pieces
4 large carrots, skin on and cut into small pieces (to make your life even easier, you could toss in 5-8 ounces of carrot shreds, which can be bought in 10-ounce packages)
1 medium onion, cut into large chunks
1 1.25-ounce package onion soup mix
Salt and pepper (about 2 teaspoons of each)
1 cup flour
2 14.5-ounce cans beef broth
1/4 cup Worcestershire sauce

Place stew meat, potatoes, carrots, onion, soup mix, salt, and pepper into slow cooker.

Sprinkle in the flour and stir to coat all the ingredients.

Pour in the beef broth.

Set slow cooker to low heat for 4-6 hours.

Toward the end of the cook time, stir in the Worcestershire sauce.
